What We Are Eating Wednesday: Protein Muffins


Hey y’all, it’s Anna. Happy #whatwereeatingwednesday! Today, I want to share with you our AWARD-winning protein banana muffin recipe. Okay, it hasn’t won any awards (yet), but @christinapendleton’s 2-year old ate FOUR of them in one day. That’s just as good as any award 🥇. The original recipe is from Debby Loves to Cook, but we’ve made some adaptations:
▪️2 c Kodiak Cakes buttermilk waffle/pancake mix
▪️1 c unsweetened vanilla almond milk
▪️2 egg whites
▪️1/4 c brown sugar
▪️1/4 c pure maple syrup
▪️2 TB melted coconut oil
▪️2.5 ripe bananas mashed
▪️1 tsp cinnamon
▪️2 oz chopped nuts (pecans, walnuts, I sprinkled sliced almonds on top of this batch)
▪️1/2 c semisweet chocolate chips (optional, good with and without!)
🔸Mix it all together, pour into muffin tins (grease if not using liners), and bake for 18-19 mins!
Each muffin is 150 calories and 6.6 grams of protein 😋. These are our new favorite. Enjoy!
