Self-Care Saturday: "Healthy" Cookies

Happy #selfcaresaturday! Giveaway winner to be announced very soon! This Saturday, I am sharing our family’s favorite “Healthy Cookie” recipe created by our Grandma Carolyn many years ago. Although we can’t guarantee these delicious cookies are calorie free and sugar free...we CAN guarantee they are packed with yummy add-ins and oh so satisfying! 😋This recipe makes about 48 cookies. Enjoy!

GRANDMA’S HEALTHY COOKIES

🍪1/2 c butter
🍪1 c shortening
🍪1.5 c brown sugar
🍪1.5 c sugar
🍪4 large eggs
🍪1 TBSP vanIlla
🍪2 tsp baking soda
🍪2 tsp baking powder
🍪1 c bran
🍪1.5 c whole wheat flour
🍪2 c white flour
🍪3 c old fashioned oats
🍪1/2 c raisins
🍪1/2 c chopped nuts (pecans or walnuts)
🍪3/4 c shredded coconut
🍪1 c chocolate chips (can be either milk or semisweet)

Cream together first 7 ingredients. Stir in the next 6 and then remaining ingredients. Let dough chill 20-30 minutes before baking. Bake at 375 degrees for 8-9 minutes.

These cookies freeze well already baked. I also like to use a cookie scoop and freeze the cookie dough already in balls (see second picture). When I need to bake some, I take the dough out 15 minutes before to defrost.
